Peanut Ladoo / Groundnut Laddu

This is one of simple, delightful and healthier version of sweet you can have any time without any guilt feelings. It is very easy to prepare and requires few ingredients and it always available in our pantry. Whenever I bought the peanuts, I always make sure to dry roast them and store it in a air tight container and use it whenever the recipe calls for. This time I completely forgot to use the peanuts for about two weeks and it was sitting whole container. As peanut and jaggary both are having potential health benefits. This is the awesome and simplest recipe to make use of them. It perfectly serves as emergency snack or mid morning hunger pangs :)

and this Peanut ladoo is also one of signature Diwali sweets.

Groundnut Laddu


Ingredients:
Peanut/Ground Nut – 1 cup
Jaggary / Brown Sugar – ½ cup

Optional Ingredients:
Salt – a pinch
Cardamom powder – ½ tsp
Cashew nuts few 

Method:

Step 01) Heat a pan and roast the groundnut nicely till they get light brown. You will get nice nutty flavor from peanuts and you will notice shiny oily skin of peanut that is the time you will turn off the gas. And allow them to cool.

Step 02) Blend the roasted peanut in a food processor and blitz until roughly chopped and then add the chopped jaggary and blend it again until the mixture starts to come together.  Repeat the same for the remainder of peanut and jaggary.

Step 03) Transfer this mixture to a big plate add a pinch of salt, cardamom powder, chopped cashews and mix it nicely and evenly.  Salt, Cardamom powder and cashew nuts are just to enhance the taste, fragrance and crunchiness to the laddo.  You can skip them totally, still the laddo tastes wonderful.  These are for value addition.

Step 04) Take a handful of blended mixture and gently press it together to form a shape of ball.  start to roll them as per your preferred size like big, medium or small.

Step 05) As the roasted peanut leaves the oil, there is no need of extra oil to roll them, if you still thought to make them richer, you can add little ghee/clarified butter while giving shape as ball/ladoos. 

Store it in a air tight container and enjoy the laddu.

Note:
If you are looking laddos color to be white then, remove the skin of peanut before blending

You can use the powdered brown sugar instead of jaggary

For smooth texture of laddu blend the peanut as smooth powder instead of coarse powder

Namak Paare/ Matri

Namak Paare/ Matri , an authentic snack from North India. In just few ingredients you can prepare this savory snack.  You can have this snack any time of a day and year. It tastes best when served with hot coffee or tea.


Ingredients:

Maida/ All Purpose Flour – 1 Cup
Carom Seeds/Ajwain – ½ tsp
Salt – 1 tsp
Clarified Butter/ Butter – 1 tbsp
Water -1/4 cup
Chaat Masala Powder - 1 tsp
Oil - for Frying

Method:

Step 01) Take a bowl add one cup of maida/All purpose flour, carom seeds and salt and mix it well


Step 02) Add clarified butter and mix well till it coats nicely with the flour


Step 03) Add water little at a time and knead. (Dough should be little stiff so use very little water) add ½ tsp butter in the end and knead and cover it with lid. Let dough rest for 10 to 15 mins

Step 04) Make a small size ball from the dough, grease it with pinch of butter and roll like chapati/Indian bread –just a little thicker than regular chapati

Step 05) Grease the knife with little butter and cut them in to strips and give shape as diamond or long pieces


Step 06) Heat oil in a pan for frying, once it is hot enough drop the little pieces and press them little so it dunks nicely with oil and fry them till all the pieces turns to golden color and transfer it to paper issue to absorb the excess oil


Step 07) Follow the step from 4 to 6 till you consume all the dough.





Serving:  Sprinkle some chaat Masala powder on matri before serving. Enjoy your snack time!:)

Wheat Flour Laddu /Atta Ladoo

Just like any other laddu/ladoo you can prepare laddu from wheat flour. I have used the coarse wheat flour which is available in Indian store or you can use the regular plain wheat flour. Wheat is always known for its health benefits and here is a high energy sweet dish, which you can prepare very easily and quickly.


Ingredients: 
  • Wheat Flour – 1 cup
  • Sugar – ½ cup
  • Ghee/Clarified Butter – ¼ cup
  • Cardamom Powder – 3 tsp
  • Raisins or cashew nuts – 1 tbsp
  • Milk – ¼ cup




Method:

Step 01) Heat a pan with ghee and fry the raisins & cashews and transfer them in to a plate







Step 02) Add wheat flour in the same pan remaining ghee and roast the wheat flour nicely till u get aroma or flour turns to golden brown (make sure not to burn it)




Step 03) Turn to low flame and add cardamom powder and sugar mix it nicely and turn off the heat








Step 04) Allow the mixture to cool a bit yet warm add 1 tablespoon of milk to small portion of mixture and prepare the laddo and continue this same process till u consume all the flour and turn them in to delicious ladoos

Easy Diwali Sweet Recipe | Shankarpali

Shankarpali is must for Diwali Faral/ savories in Maharashtra, India. These are so tasty crispy crunchy yet soft like biscuits and it is good for tea time snack and you cannot stop munching it. Constantly store it in a air tight container for good shelf life. To make it little healthy, you can substitute maida/All purpose flour to wheat flour. Enjoy this easy and quick snack for Diwali Sweet Recipe.



Ingredients:

  • 1/2 cup Maida / All Purpose Flour
  • 1/2 cup warm Milk
  • 1/2 cup Ghee/clarified butter or Butter
  • 1/2 cup Sugar (add more if you need more sweetness)

Time Required: 45 mins

Directions: 
  
Step 01) In a large bowl mix warm milk and sugar. After sugar dissolves completely, add ghee/clarified butter.

Step 02Now to this mixture, add all purpose flour. Keep adding the flour and simultaneously knead it into soft dough.

Step 03Keep the dough aside for half an hour. Cover it with a muslin cloth.

Step 04)Take a small portion of the dough and shape into a round ball using your palms.

Step 05Then roll out the balls into roti/pancake like shape, a little thicker than the usual roti. Using a knife cut out diamond pieces and drops into hot oil. 

Step 06Fry till golden brown. Strain on paper napkin to absorb excess oil.

Serving:  Allow to cool and store it in air-tight container. Enjoy it as tea time snack.

Easy Diwali Snack Recipe - CHIVDA

For Diwali Faral | Diwali Snacks Recipes first comes to my mind is Crispy and spicy guilt free Maharashtraian style Patal Pohe Chivda/Chiwda. It is very easy and quick to prepare just fry all the ingredients and mix it up with the spices.There are many varieties in poha/Flattened Rice, use the very thin i.e. Nylon Poha to get the ultimate crisp. Store it in air tight container and enjoy as evening snack.


Ingredients:
  • Poha / Avil /Flattened Rice  – 3 cups 
  • Mustard seeds - 1 tsp
  • Cumin seeds/Jeera – 1 tsp
  • Chana dal / Bengal gram split - 2 tbsp
  • Peanuts – ¼ cup
  • Sesame seeds/ Til - 1 tsp
  • Dry Coconut (shredded or cut in thin pieces)
  • Curry leaves - 5 to 6
  • Jeera /Cumin Seeds Powder - 1/4 tsp
  • Coriander Seeds Powder - 1/4 tsp
  • Ajwain/bishop's weed/carom seeds - 1/4 tsp
  • Turmeric Powder /Haldi - 1/4 tsp
  • Hing / Asafoetida - 1/4 tsp
  • Red Chili Powder (1 ½ tsp) (depends on taste)
  • Oil – ½ cup
  • Sugar - 2  tsp
  • Salt to taste
Time Required: 20 mins

Method:

Step 01) Heat oil in a pan, add mustard and cumin seeds. When the seeds crackle, add peanuts and chana dal /bengal gram split, fry till golden brown.

Step 02) Then drop in sesame seeds, turmeric powder, asafoetida, dried shredded coconut, curry leaves and red chili powder fry them nicely and then add Poha/avil (Flattened Rice). 

Step 03) Next sprinkle cumin, coriander, ajwain/carom seeds powders, sugar and salt mix flattened rice with oil and spices by tossing and stirring it occasionally, till the poha is crisp. Make sure poha is well coated with oil and spices.

Remove from heat. Cool and store in an air-tight container. And enjoy as evening snack.

Variations:


You can also add green chilies instead of red chili powder.
